If you enjoy comfort foods and like the flavors of the Southwestern cuisine, then these short ribs are a must make recipe. The variety of condiments– soy sauce, mint, onion, and garlic create Mojave’s mole sauce and make for a flavorful dish.
Ingredients:
8 lbs of short ribs
Mojave Mole Sauce
½ cup soy sauce
½ finely chopped onion
¼ of a bunch of mint
2 chopped cloves garlic
Additional ingredients:
2 medium sized onions – quartered
5 stalks of celery
5 large carrots
1 lb corn kernels
8 oz red wine
Whole black pepper (about 10)
Method: Mix all of the ingredients for the Mojave mole sauce and marinate the meat in these overnight. To prepare: pan-sear the short ribs and place them in a roasting pan. Pour marinade over them, add in the remaining ingredients and bake for 1 hour in a pre-heated 425° oven. Reduce the temperature to 375° and continue to cook for 1 ½ hours.
