Benjama’s Taste of Thai  

(Serves 2)

Benjama’s healthy ginger chicken is a tasty entrée that takes minutes to prepare. This dish has its basis in Thai cooking, but is close enough to Asian fusion that you could fit it into a number of meals. The ginger and sugar definitely give this dish a strong flavor so it would be complemented best by simpler foods, like rice or noodles.

Ingredients:

1 whole skinless chicken breast, cut into bite sized pieces
¼ sweet julienned onion
10 pieces of canned baby corn
½ cup fresh shitake mushrooms, cut into quarters
1 red bell pepper, sliced
3 fresh scallions cut into short pieces
3 tbsp fine fresh julienned ginger
2 cloves garlic, chopped
½ tsp sugar
1 tbsp soy sauce
1 tbsp cooking oil

Method: Heat oil in the wok. Add garlic, ginger and chicken stir-fry for 5 minutes. Next, add baby corn, onion, mushroom, peppers and sugar, soy sauce fresh scallion. Stir-fry for 4 minutes and serve.
